We roast in the 15th, we source from four farms, we open at seven.

Séjour is a café and micro-roastery on rue de la Croix Nivert. We buy directly, roast in small batches, and brew with the assumption that you have nowhere else to be.


Origines

Four farms, three countries

We buy whole-crop lots, not auction selections. Each relationship started with a visit, a conversation, a shared meal. The farms are small — eight to thirty hectares — and the agreements are annual, renewable by mutual consent.

Our roasting follows the bean, not a house profile. Batch sizes stay under 12 kg so we can adjust mid-roast by smell and sound. Most weeks we run four to six batches, all sold within 14 days.

Nothing arrives pre-ground. We grind to order for every brew method and adjust throughout the day as humidity shifts. A machine-set grinder is a guess; a hand-checked grind is a promise.
