In the quiet heart of Le Marais, a single cup asks nothing of you but presence. No laptop hurries. No meeting interrupts. Just the sediment settling, the steam rising.

A deliberate slowness

Sable is named for the sand—the grounds—that remain at the bottom of the cup. We don't roast for volume, we don't pull shots for speed. Our beans arrive from small plots in Yirgacheffe and Huila, rested, then roasted here in Paris in batches of twelve.

The chair is worn to fit you. The light shifts across the raw plaster through the afternoon. There is no background music, only the grinder and the hiss of the steam wand. Stay until the cup is cold.
